The selection of finish should take into consideration colour, shine, porosity, and maintenance.

When polishing stone we use a course of abrasive rotating polishing pads that progressively polish the stone.
With polished granite:
The pores of the stone are closed therefore having minimal porosity and most difficult to stain.
The shine and color of the granite is at its greatest.
It is the most hygienic finish.

When honing stone we use a course abrasive to remove the polished surface of the stone.
With honed granite:
The surface is smoothe and has a matte finish.
The pores of the stone are more open therefore increasing porosity and potential for staining.
It is less hygienic than a polished surface.
